Instructions to make Genasale:
  1. Wash rice and soak it for 4 hours in water.
  2. Next Grind the smooth and thick batter
  3. Add salt
  4. Grated coconut, jaggery and cardamom powder_ mix together. coconut jaggery mixture is ready.
  5. Spread the batter on a banana leaf
  6. Spread the coconut jaggery mixture on one half portion.
  7. Fold and steam cook for 30_ 45 minutes.
  8. The tasty genasale is ready and enjoy with ghee, pickle or chutney.

Kayi genasale is also prepared using poha, fine rava or chiroti rava and rice as outer covering. These rice rolls are steamed in fresh and tender turmeric leaves. Traditional kayi genasale using bay leaf is also a major sweet prepared by Havyaka brahmin community of coastal North Canara. Genasale is basically rice rolls stuffed with fresh coconut and jaggery mixture and steamed in turmeric leaf /banana leaf. In case you dont get turmeric leaf, you can use bannana leaf , but it tastes heavenly when cooked with turmeric leaves.
